Hey there! Welcome back. I am so excited to share one of my personal favorite weeknight dinners- Smoked Buffalo Wings on Traeger. Seriously, I will sometimes make this twice a week for dinner. There is always a dozen wings in my fridge or freezer at all times. It is smokey, zest and just a pinch of spiciness.
Origin Story of Smoked Buffalo Wings
Have you ever loved a restaurant meal so much that you tried to make it at home? This is how my Smoked Buffalo Wings came exist. There is a local pub in the Kansas City metro that is known for their wings. They make them cook to order and honestly they are worth the wait. I have tried again and again to recreate the sauce and seasonings of those wings and yet it is still a mystery. However, I did find craft my own goto recipe.
Wing Cooking Tips
There are two things that make this recipe great. The first is the seasoning blend. The wings have to be seasoned well and partially cooked before they are sauced. I also add two coats of sauce. One as they reach 150 degrees and a final saucing 5 minutes before you take them out of the grill. Sad wings honestly are just cooked and sauced. Don’t make sad wings.

Secondly, using a pellet grill brings out a smokey flavor. My favorite pellet is the Traeger Mesquite Pellets, but feel free to choose your favorite flavor. A charcoal or propane grill can also work but they will have a slightly more charred flavor rather than smokey.

Sauce
Feel free to use your favorite buffalo sauce. I tried quite a few but my favorite bottle is the Whole Foods Organic Buffalo Wing Sauce. It’s priced well (which is great since I make these 2x a week sometimes) and I love that it is all organic. I have attempted to make my own from all organic ingredients and it does add extra time. Crowd Pleasers
My Smoked Buffalo Wings is definitely a crowd pleaser. This past summer my fiancé and I had a group of friends over and we easily made 50 wings. They were such a hit! We smoked them on our pellet grill in batches. We arranged them on a few baking sheets and popped them in the oven on warm so they were ready when our guests arrived. It was the most stress free batch cooking I have ever attempted. I am already planning to double the amount next BBQ!

Smoked Buffalo Wings
Equipment
- 1 pellet grill
- 1 tongs
- 1 bowl for sauce
- 1 grill brush
- 1 large bowl mixing spices and wings tighter
Ingredients
- 2 tbsp ground mustard
- 1 tsp cayanne
- 1 tbsp onion powder
- 1 tbsp garlic powder
- 1/4 tsp salt
- 1/2 tsp pepper
- 12 whole chicken wings
- 1/2 cup buffalo sauce
Instructions
- Pre-heat your pellet grill to 350 degrees.
- Place wings in a large bowl. Add mustard, onion powder, garlic, salt and pepper. Using tongs toss the wings until all are coated in spices.2 tbsp ground mustard, 1 tsp cayanne, 1 tbsp onion powder, 1 tbsp garlic powder, 1/4 tsp salt, 1/2 tsp pepper, 12 whole chicken wings
- Once the grill reaches 350, place wings on the middle of the grill grate. Cook for 10 minutes.12 whole chicken wings
- After 10 minutes check the temperature of the wings. Once it reaches 150 using grill brush, sauce each wing. Cook for 5 minutes.12 whole chicken wings, 1/2 cup buffalo sauce
- Turn wings over and sauce the other side.12 whole chicken wings, 1/2 cup buffalo sauce
- Add one more layer of sauce to each wing once they have reached 160 degrees. Continue to cook until wings are 165 degrees.12 whole chicken wings, 1/2 cup buffalo sauce
- Remove from grill and enjoy!12 whole chicken wings
