Hello, calling all my weekend friends! It’s time for another brunch adventure! I am pleased to share my Boursin Cheese Egg in a Hole! Whoa…what a mouthful right? Try saying it 5 times really fast. Despite the name it is actually extremely simple to make. Using the Boursin Cheese gives it this brunch dish an extra something wonderful. One of life’s greatest little pleasures is dipping toast into a gooey warm egg. Now, imagine that toast is also fried cheese made with Boursin! Magnificent.

Cheese Please
The cheese used in this recipe is Boursin Cheese. It’s a soft herby cheese that comes shaped like a hockey puck. I was first introduced to this flavorful cheese after trying this instapot recipe by Jeffery Eisner. That recipe has become a household staple enjoyed at least a couple times a month. Since then, I have leftover Boursin Cheese in my fridge. Ah the possibilities!
Eggs in a Hole
Eggs in a hole (or as my relatives once jokingly referred to it as !@#! on a shingle) is when you fry an egg inside a piece of bread. This is a classic easy breakfast that I learned as a teenager. However, when I think about brunch…I think about all the ways I can do a fun twist on basic breakfast food.
First, this recipe calls for a good piece of sourdough. You can use home made sourdough or get a fresh loaf.
I keep mine a bit rustic so I use my hands to remove some of the bread from the middle. Feel free to enjoy it as a cooking snack. One side I will spread butter and the other side I will spread Boursin.

Once your pan is hot, add the butter side first and cook until the edges are crispy and toasty. Flip it over with spatula so the Boursin cheese side is facing down. Crack 1 egg in the hole and cook for 2 minutes.

The hardest part is taking the egg in a hole out of the pan. If you do it too early, it will all fall apart. Don’t worry, it’s easy to try again. If you take it out too late, your egg will no longer be runny. The more you make it, the better your egg in a hole timing will become. I believe in you!
I enjoy topping with fresh veggies like fresh shallots and a few cherry tomatoes
