Simmered Green Beans and White Mushrooms

Hey darlings. Are you looking for a side dish that is tasty, quick, and packs a nutritious punch? Look no further than my Simmer Green Beans and White Mushroom side dish. It has been a busy winter for me and having a healthy but quick side dish has been helpful with keeping to my nutritional goals. This is the the kind of side dish you get started and can let simmer while you prep your main entree. Now that is easy cooking!

Green Bean and Mushroom Prep

Vegetable prep for my Simmered Green Beans and White Mushrooms is relatively simple. It involves snapping and slicing.

First, you will want to snap each end off of the green bean. Discard the ends or compost if you’re able to. Some bagged green beans already have this step done for you. I find snapping the green beans a soothing activity One of my first memories in the kitchen involved snapping the ends off of green beans at my grammy’s house to help her prep for our weekly Sunday Dinners.If you have young ones, this is a great way to expose them to learning how to cook.

Next, you will want to to wash your mushrooms. It is best to do this step right before cooking or run the risk of having mushy mushrooms in your fridge. I found this fantastic stoneware colander at Pottery Barn that has been helpful when I only need a handful of fresh produce washed. After washing, I lightly pat my mushrooms dry. Finally, using a shop knife I slice them into thin slices.

Chicken Stock and Lemon Pepper Seasoning

The two ingredients that keep me coming back and making my Simmered Green Beans and White Mushrooms on repeat are the chicken stock and the Lemon Pepper Seasoning. While I could use water, chicken stock adds a bit more flavor to the vegetables. The more flavor my healthy side has the more likely I am going to eat it. It also very low fat since it requires no cooking oils. If you are following a vegan/vegetarian lifestyle I highly suggest swapping the chicken stock for vegetable stock. Lastly, having just a bit of Lemon Pepper Seasoning to the stock keep me from reaching towards the salt shaker. This is a good way to keep your sodium intake lower as long as your spice blend is salt free.

Making Green Beans and White Mushrooms is so efficient, it allows you to focus on your main entree or perhaps dessert while they are cooking. Get your side dish started and pick an entree from below for a great pairing.

Simmered Green Beans and Sliced White Mushrooms

Equipment

  • 1 sauce pan
  • 1 slotted spoon for serving

Ingredients

  • 6-8 whole white mushrooms sliced
  • 4 lbs green beans
  • 2 cups chicken stock substitute vegetable stock for vegan/vegetarian options
  • 1 tbsp lemon pepper seasoning blend

Instructions

  • Snap the ends off of your green beans and slice your mushrooms. Place everything in a stock pot.
  • Add chicken stock and lemon pepper seasoning to the stock pot. Bring to a boil then simmer for 10 minutes.
  • Serve and enjoy!
