Place in a container and add 1 Tbsp sugar, pepper, and thyme and vinegar.
Each day for 3 days add 1 Tbsp of sugar.
Enjoy on day 3.
Notes
I use distilled white vinegar since it's very inexpensive. Rice wine vinegar or champagne vinegar would also work if you have them on hand. Apple cider, red wine, or tarragon vinegar are too overpowering for this dish.
