Hi darlings. Can you guess what my favorite meal of the week is? If you guess BRUNCH, then you are correct! Our next culinary adventure is an amazing home made brunch that is flavorful and affordable. My Air Fried Brown Sugar BBQ Potato and Eggs will have both vegetarians and carnivores craving more! The potatoes are a fun twist on your classic breakfast potatoes smothered in brown sugar and your favorite BBQ rub. Pair it with some scrambled eggs and you are ready to brunch!
KC Brunch
Kansas City is truly a brunch city. Restaurants will have speciality curated menus only available on the weekend that are often fun fusions of breakfast and lunch. The rules for brunch are as follows:
- Brunch is anytime between 9:00-2:00 PM
- You can have coffee or alcohol or both!
- You can enjoy breakfast or lunch foods (or a combo of both)
- It is the best time to catch up and share a meal with friends and family!
This recipe was inspired by one of my long time favorite brunch spots : Char Bar. I am not sure what kind of magic they put in their breakfast potatoes but they are amazing! Crispy, slightly sweet and savory at the same time! I highly recommend checking them out if you’re local or traveling to the Kansas City area. The Burnt End Benny is perfection and the Shrimp and Grits is a favorite!

Home Made Brunch in 20 Minutes!
Yes, you read that right. This entire meal comes together in just 20 minutes. Best part about home brunch is cooking in your slippers.
First you will cut your Baby Dutch Red potatoes into small bite sized pieces. Next sprinkle on your seasonings. Its so easy to remember because it only takes a tablespoon of each :
- brown sugar
- ground mustard
- dried onion flakes
- BBQ Rub
For the BBQ rub, I highly recommend Joes Big Meat Seasoning. Feel free to use your favorite BBQ rub. Kinders Brown Sugar BBQ is also a great. I would steer away from anything labeled as steak rub or tequila lime. You’re looking for that classic BBQ flavor
After the potatoes are coated in the seasoning mixture, add a few spray of avocado oil. Next, cook your potatoes in the air fryer on 375 degrees. The spice mixture will caramelize on the potatoes and the insides will become soft.
After 10 minutes of airfrying you will want to start your scrambled eggs. I crack two eggs into a bowl and stir until mixed. I heat a pan on high heat and add avocado oil. Add your eggs to the pan and use a spatula to start stirring. They will cook quickly. When the eggs are nearly cooked, I take my pan off of the heat and continue to stir until done. Add to your plate. Your potato will be nearly done and can be added as well.
To garnish I like to sprinkle some green onions.
Variations and Pairings
This recipe is very flexible and allows for variations if needed. Brunch is easy going and so should this dish.
- Instead of baby dutch, you can use Yukon gold, Russet, or fingerling potatoes.
- Instead of onion peel, try cooking with fresh slivered onions.
- Try eggs a different way. Over easy or poached would work wonderful as well.
- Garnish with a drizzle of hot sauce.
- For my carnivores, try adding 1/4 cup of pulled bbq chicken for a more protein packed lunch.
